Rice pancakes with coconut sauce

Ingredients for pancakes

  • 1 cup soaked rice
  • 1/2 cup sugar
  • 1 cup milk
  • 100g creamed coconut (Use coconut milk/cream 1 cup to skip using milk and creamed coconut)
  • 1 tsp cardamom
  • 1 tbsp yeast

 

ingredients for coconut sauce

  • 2 cups coconut milk/cream
  • 4 tbsp sugar
  • 2 tbsp corn flour
  • 1 tbsp vanilla essense

Method:

1.In a blender put 1 cup of soaked rice,1/2 cup sugar,1cup milk,100g creamed coconut(use coconut milk/cream to skip using milk and creamed coconut,1tsp cardamom and 1tsp of yeast.

2.Blend all ingredients until smooth and check if the cardamom and coconut has blended well.

3.Pour in a bowl and let it rise 40mins-1hour,after rising mix well and the mixture is ready to cook.

4.You can use a non-stick pan to cook or any other pan that doesn’t stick and apply oil before pouring your mixture to a heated pan

5.Pour the mixture depending on how thick you want it to be. Pour the mixture and cover it to let it cook.Flip the pancake so as to allow it to cook both sides.

6.Repeat the process until you finish.

For the coconut sauce:

1.In a heated pan add 1 1/2 cups of coconut milk/cream,4tbsp of sugar,1tbsp of vanilla essence.

2.To the half cup of coconut milk/cream add corn flour and stir well to avoid lumps.

  • Nazi ya kiboksi nusu (gram 100) Tumia nazi ya maji kikombe 1 na usitumie maziwa pamoja na nazi ya kiboksi
  • Iliki kijiko 1 kidogo
  • Hamira kijiko 1 cha kula

Mahitaji kwa tui

  • Tui la maji vikombe 2
  • Sukari vijiko 4 vya chakula
  • Corn flour vjko 2 vya chakula
  • Arki kijiko 1

Matayarisho:

1.Katika blender weka mchele uliorowekwa kikombe kimoja,sukari nusu kikombe,maziwa kikombe 1,nazi ya kiboksi nusu(gram 100) Tumia nazi ya maji kikombe 1 na usitumie maziwa pamoja na nazi ya kiboksi,iliki kijiko 1 kidogo,Hamira kijiko 1 cha chakula.

2.Saga vizuri na uhakikishe imesagika vizuri na kuangalia kama hakuna vipande vya iliki au nazi.

3.Weka katika bakuli na uache uumuke kwa dakika 40 mpaka lisaa.Ukiumka uchanganye vizuri na tayari kupika.

4.Tumia non stick pan kupikia au pan yoyote kisha weka mafuta kidogo kabla ya kuweka mchanganyiko wako.

5.Weka mchanganyiko wako kiasi kutegemeana na unene unayotaka

6.Funika na uweke mafuta kiasi kisha geuza ili iive upande wa pili.Rudia mpaka kumaliza mchanganyiko

Jinsi ya kutengeneza tui:

1.Katika sufuria weka tui kiasi, Sukari vijiko 4 vya chakula,arki kijiko 1 na kisha tui iliyoaki changanya vizuri na corn starch.Tumefanya hivo kuepuka madonge kutokea.

2.Kisha weka kwenye tui lako linalochemka.

3.Koroga vizuri kwa dakika 6-8 na ukoroge vizuri kuepuka kumwagika

4.Mwagia sauce juu ya vibibi na iko tayari kwa kula.
