SOFT COCONUT CHAPATIS

INGREDIENTS

4 cups all purpose flour

1 cup coconut milk

1 egg (optional)

salt

1 tbsp. sugar

2 tbsp. cooking oil

1/4 cup water

METHOD

  1. mix all the ingredients together except water, mix for one minute by using hands or mixer
  2. add 1/4 cup of water and knead until soft , the more you knead the dough the soft the softer the chapattis will be
  3. if the dough is too sticky add some flour
  4. place the dough on a work surface , divide in to 5 equal parts, shape each part in to a ball
  5. roll each dough into a circular shape add 1 tbsp. of oil on top and start folding and make a coil shape
  6. repeat with the other 4 balls, let them rest for 15 minutes or more
  7. heat the pan, roll your chapatti into round shape, place on a hot pan and cook on a medium heat, when the first side is done flip the other one cook for 30 seconds, add 1 or 2 tbsp. of cooking oil and cook until you get a nice colour
